Chicken Noodle Stir Fry

Ingredients
Chicken:
9 oz chicken breast, cut into thin strips
Salt as needed
1-2 tblsn vegetable oil
1 red chili deseeded and finely chopped (or as much as you'd like to your taste)
1 tsp finely diced or grated fresh ginger
1 tsp finely diced or crushed fresh garlic
Sauce:
2 tbsp dark soy sauce
1 tsp oyster sauce
1/2 fresh lime - juice only
1 tsp brown sugar
1/8 -1/4 tsp white pepper
Veggies & Noodles:
5 oz dried noodles
About 1 tsp ( enough for drizzle over noodles)
1 large carrot (sliced into thin matchsticks)
1 red pepper (bell pepper ), chopped into 1 inch pieces
3-4 green onions, sliced into 1 inch pieces and divided into green parts and white parts
4-6 mushrooms, sliced
2-6 oz snap peas
Garnish:
Crushed toasted peanuts
Sesame seeds
Instructions
- Combine sauce ingredients and set aside
- Prep all veggies: carrot, red pepper, mushrooms, green onions, and snow peas.
- Cook noodles, drain and toss in a small amount sesame oil to prevent sticking, set aside
- Add 1 tablespoon oil in fry pan (or wok) over high heat, season chicken with salt then add to hot oil in pan, fry until chicken starts to cook then add chili, garlic and ginger and fry for about 30 seconds longer. Take chicken mixture out of pan and set aside.
- Add carrot, red pepper, cook until starting to get tender, add mushrooms, white parts of onion cook about 30 seconds then add green parts of onion and snow peas, starry until veggies just tender.
- Add noodles, chicken mixture, cook until hot then add sauce and cook until heated through and thoroughly mixed.
